Chicken is a delicious and wonderful protein sourced option for a keto diet containing low-carbohydrates. Chicken is easily adapted and eaters usually love it irrespective of any age. It is already a lean option for keto diet but it can become fantastic by adding some vegetables and fats.

1. Keto Garlic Chicken with Spinach and Broccoli in 15 minutes

Ingredients:

  • Chicken breasts – 1 pound
  • Italian seasoning – 1 teaspoon
  • Olive oil – 2 tablespoons
  • Pepper and salt to taste
  • Crushed pepper – 1/4 teaspoon (optional)
  • Chopped tomatoes – 1/2 cup
  • Minced cloves garlic – 3 to 4
  • Baby spinach – 2 cups
  • Broccoli florets – 2 cups
  • Cream cheese – 4 oz
  • Cheddar, shredded cheese mozzarella, melting cheese or parmesan – 1/2 cup

Procedure:

  1. In a large saucepan heat olive oil 2 tablespoons over medium heat. Add the chicken breasts (chopped), red pepper (crushed), Italian seasoning, pepper and salt. Fry for 5-6 minutes until chicken cooked and turn a golden colour. 
  2. Secondly, add garlic into the pan and sauté again for at least one minute. Add cream cheese, shredded cheese, spinach, broccoli and tomato. Moreover, cook this until broccoli is thoroughly cooked or saute for another 4-5 minutes. 
  3. Serve this with cauliflower rice, zucchini noodles, pasta or rice. 

2. Easiest Malibu Chicken Recipe

Components:

  • Chicken breasts – 4 
  • Malibu Dipping Sauce
  • Yellow mustard – 3 tablespoons
  • Mayonnaise – 1/2 cup
  • Low carb powdered sugar – 1 to 2 tablespoon 

Crumb Topping

  • Parmesan cheese – 3/4 cup
  • Granulated onion – 1 teaspoon
  • Granulated garlic – 2 tablespoons
  • Pepper – 1/8 teaspoon
  • Salt – 1/4 teaspoon

Topping

  • Deli ham – 8 pieces (thin slices)
  • Swiss cheese – 4 slices 

Procedure:

  • Preparation:

Firstly, the oven preheated to 350° and the rack is placed in the middle. Ready a 1/4 size pan sheet for the chicken and 9 x 13 inch of a baking sheet of glass. 

  • Method:

Chicken placed on a medium-sized plate. Season with pepper and salt. Mix the sweetener, mustard and mayonnaise in a small bowl. 1/4 cup of the mustard mixture added on to the plate containing chicken. Reserve the rest of the mixture for later so that used as a dipping sauce. Chicken rolled with the mixture with the help of fork on the plate. This chicken marinated for one day or cooked right then. 

Further, mix seasonings, parmesan cheese and pork rinds. 1/2 of crumb mixture sprinkled on chicken placed on sheet pan and baking dish. Chicken placed on the top of the crumbs. Another half of the crumb mixed with chicken breasts.  

  • Baking:

Bake the chicken until cooked properly or cook for 30-40 minutes. Chicken removed from the oven further cheese and ham added on top. But, again place back into the oven so that cheese melts. Ready to serve. 

3. Shredded Keto Chicken Chilli 

Ingredients: 

  • Large chicken breasts (shredded) – 4
  • Chopped onion – 1/2
  • Butter – 1 tablespoon
  • Chicken broth – 2 cups
  • Chili powder – 1 tablespoon
  • Tomato paste – 2 oz
  • Undrained, tomatoes canned – 10 oz 
  • Garlic powder – 1/2 tablespoon
  • Cumin – 1 tablespoon
  • Cream cheese – 4 oz
  • Chopped jalapeno pepper – 1 (optional)
  • Pepper and salt to taste

Instructions:

  1. Firstly, for 10-20 minutes chicken is kept for boiling on a stovetop with barely covered in liquid. When the meat is no longer pink in colour remove it from the fluid and shred with forks. This technique followed in a pressure cooker for 5 minutes or 4-6 hours in a slow cooker. 
  2. Melt butter in a stockpot. Add onion and cook it until it is translucent. 
  3. Further, add shredded chicken, jalapeno, chicken broth, garlic powder, cumin, chili powder, tomato paste, and diced tomatoes in a pot and stir gently so that it combines. Again boil it for some time, then reduce the flame and for 10 minutes bring it to medium-low heat, cover it. 
  4. Cream cheese cut into 1-inch small chunks.
  5. Remove the lid and mix the cream cheese. Heat increased stir in medium-high so that the cream cheese mixes completely. Again heat is put off and now it is seasoned with pepper and salt to taste. 
  6. One can also use other required toppings go choice.
